POTATO MEAT LOAF

Mince meat 250 gm
Ginger garlic paste  1 tbsp

Onion chopped 3 tbsp
Salt 1 tsp
Chili powder 1 tsp
Green chilies 3 chopped
Boiled peas  ½ cup
Carrot 1 cut into small cubes and boiled
Bread crumbs  ½ cup
Butter 1 tbsp heaped
Cheddar cheese grated  ½ cup
Tomato paste 2 tbsp
Vinegar 2 tbsp
Allspice 1 tsp
Wooster sauce 1 tbsp
Coriander leaves chopped 2 tbsp
Egg 1

Bread slices 2 soaked in water

Ingredients for white sauce


Milk 1 cup
Water ¼ cup
Flour  2 tbsp heaped
Salt, white pepper, mustard ¼ tsp each
Butter  1 tbsp
Ingredients for coating
Boiled and mashed potatoes ½ kg
Butter 1 tbsp
Salt and white pepper  ½ tsp each
Milk ½ cup


Method


Boil mince with ginger garlic paste, chopped onion, salt, chili powder, chopped green chilies and 1 cup of water till water dries and mince tender, in cooked mince add boiled vegetables, soaked bread slices, vinegar, Wooster sauce, tomato paste, allspice, egg, chopped coriander leaves and prepared white sauce, mix everything well with your hand, freeze loaf tin well, sprinkle the base and sides with bread crumbs lavishly, pour the mixture of cream in prepared tin, dot with 1 tbsp of butter, grated cheese, bake for 35 to 40 minutes on 180 degree C, over turn on a serving platter, then spread all over the sides of loaf with mashed potatoes, decorate top with tomato, coriander and piped mashed potatoes.
Method for mashed potatoes
Peel, boil and mash potatoes until tender add in salt, white pepper, butter and milk, the mixture should be of piping consistency.

BROCCOLI CHEESE BALLS

Broccoli: 1 big ( chopped & boiled)

Parmesan cheese: 1 cup

Onion: 1 chopped

Black pepper: 2 tsp

Salt: as per taste

Ginger garlic paste: 1 tsp

Chili garlic sauce: 2 tsp

Egg: 2 beaten

Breadcrumbs: 1 pack

Oil: for frying

 INGREDIENTS:

In a bowl add all the ingredients except egg & breadcrumbs.

Make small balls.

Dip into egg then in breadcrumbs.

Deep fry the balls in oil until golden brown.

Serve hot.

Enjoy.

SPICY SPAGHETTI

Spaghetti : 1 pack boiled

Onion: 1 large cube cut

Tomato puree: 1 cup

Chili garlic sauce: 1 cup

Black pepper: 2 tsp

Salt: as per taste

Soy sauce: 2 tbsp

Chines salt: 1 tsp

Garlic chopped:2 tsp

Red pepper powder: 2 tsp

Chicken powder: 2 tsp

Oil: for shallow fry

METHOD:

Heat oil in pan,add onion, fry until soft.

Add garlic & tomato puree,cook for 3 min.

Add spaghetti and mix well.

Now add all the ingredients one by one & mix well.

Cook for 5 min.

Dish it out & garnish with coriander leaves .

Enjoy.

BLACK PEPPER & VINEGAR POTATO

METHOD:

In a pan heat oil.

Add potato and all ingredients,mix well.

Cook till golden brown.

SPICY & CRUNCHY CROQUETTES

Potato: 6 large boiled & mashed

Salt: as per taste

Red pepper: 2 tbsp

Black pepper: 1/2 tsp

Chili garlic sauce: 1 tsp

Rice flour: 1 cup

Oil: for deep frying


METHOD:
In a bowl add all the ingredients except rice flour & mix well.

Make cylindrical shape.

Heat oil in pan.

Put croquettes in rice flour & fry until light golden.

Enjoy.

HEALTHY BEET ROOT SOUP

water: 1 liter

black pepper: 1/2 tsp

garlic:1 clove chopped

METHOD:

In a sauce pan boil beet roots.

Blend it until it become smooth.

put it in pan again add salt,water & ginger.

Give it a boil, soup is ready.

DELICIOUS & CRISPY FRENCH FRIES

Potato: 4 peeled and cut

Red pepper powder:1/2 tbsp

Black pepper powder:1/2 tsp

Salt:as per taste

Egg: 1 beaten

Flour: 1 cup

Oil: for frying

METHOD:

Take a bowl full of chilled water and soak cut french fries into it for 5 min.

Pat dry them with paper towel.

Add red pepper and salt in it.

Preheat Oil in a deep pan.

Add black pepper into flour.

First coat french fries in flour then dip into beaten egg and fry until golden.

Serve hot.

YUMMY POTATO TOTS

Coriander leaves: 4 Tbsp chopped

Garlic: 2 tsp chopped

Black pepper: 1 tsp

Salt: as per taste

Green chili: 2 chopped

Bread crumb: 1 cup

Egg: 2 beaten

Oil: for frying

METHOD:

In a bowl add potato,onion,coriander leaves,garlic,black pepper,green chili,salt and mix well.

Give it the shape you desire.

Heat oil in pan

Take tots and first dip in egg then in bread crumb than in oil and fry until light golden

Serve hot.

SAUSAGES POTATO TART

Potato: 5 thinly sliced

Heavy cream: 1/2 cup

Black pepper: 1/2 tsp

Red chili powder: 1/2 tsp

Salt: 1 Tsp

Melted butter: 2 Tbsp

Puff Pastry: 1 sheet

pre cooked Sausages: 4 thin slices

Parmesan cheese: 4 cups

METHOD:

Take a bowl add all the ingredients except puff pastry and cheese.

In well greased baking tray place puff pastry then add 2 cups of cheese then add all the potato and spice mixture then add remaining cheese.

Bake it for 30 mins at 200C.

Easy Potato Salad


  • INGREDIENTS:

  • New potatoes
  • Spring onions
  • Lemon 
  • juiceMayonnaise
  • Salt+pepper

METHOD:


1. Boil potatoes until cooked and allow to cool.
2. Chop spring onions into small pieces and add to the potatoes in a large bowl.
3. Squeeze a little lemon juice over the potatoes and spring onions.
4. Add mayonnaise and seasoning and mix well.
5. Keep refridgerated.

Nandos French Fries


Ingredients:

Potatos
Nandos chip sprinkle
Oil

Technique:

Peel and cut potatos in to chips

generously cover your chips with the chip sprinkle

put potatos in to a bowl and cover with oil or fry light spray

spead out onto a baking tray and cook in the oven for about 20-30 mins, may take longer depends how thick youve cut your chips

serve and cover with more sprinkle if u wish

Sliced Layer Potatos


Ingredients:


1 huge jacket potato
one onion
Garlic powder
Lots of grated cheese
one vegetable stock cube
Salt
Pepper
Mixed herbs

Process:


one. Peel the potato & then slice thinly
two. Chop the onion & soften with butter in a pan
two. Place layer of potatoes in a small casserole dish
three. On top of this layer put a pinch of salt, pepper, mixed herbs as well as a spoonful of onions. Cheese is also optional.
four. Continue with further layers until the top. Leave space for further layer..
five. Make up the stick cube & then pour in to the casserole dish until it fills up about half way.
6. Add grated cheese to the top
7. Pop in the oven on a medium temperature for around 40 mins.

Ham And Potato Soup


Ingredients:


3 1/2 cups peeled & diced potatoes
 1/3 cup diced celery
 1/3 cup finely chopped onion
 3/4 cup diced cooked ham
 three 1/4 cups water
 two tablespoons chicken bouillon granules
 1/2 teaspoon salt, or to taste
 one teaspoon ground white or black pepper, or to taste
 five tablespoons butter
 five tablespoons all-purpose flour
 two cups milk

Directions:


Combine the potatoes, celery, onion, ham & water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about ten to 15 minutes. Stir in the chicken bouillon, salt & pepper.
In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, & cook, stirring constantly until thick, about one minute. Slowly stir in milk as not to permit lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, four to five minutes.
Stir the milk mixture in to the stockpot, & cook soup until heated through. Serve immediately.

Meat Potato


Ingredients:


Goat meat (mutton) about one lbs
Potatoes four medium peeled & cut in fours
Onions two medium cut in lengths
Garlic crushed 1tbsp
Ginger crushed 1tbsp
Crushed tomatoes about one can
Salt 1tsp or according to taste
Red chili 1tsp
Haldi (turmeric) one tsp
Garam masala powder one tsp
Green chilies 3-4
Fresh cilantro cut for garnishing
Cooking oil, 1/3 cup


Procedure:

Put the meat & cup water in a deep saucepan.
Now add the onions, ginger, garlic salt, red chili, haldi & let it cook for about 25 minutes.
When the water starts to dry up, add the oil & fry for another five minutes.
Now add the tomatoes & potatoes & keep on stirring while cooking.
When the meat potatoes & meat start sticking to the sauce pan, add about glass of water, & cook on low heat.
If the potatoes are cooked & the meat is tender, the aloo gosht is prepared.
Sprinkle the garam masala, & garnish with cilantro & cut green chilies.

Mashed Potato Casserole


Ingredients:


6 medium potatoes, peeled and quartered

1 tablespoon salt

1/4 cup butter, melted

1 cup Daisy Brand Sour Cream

1 cup sharp Cheddar cheese, shredded

2 tablespoons fresh chives, chopped

1 teaspoon salt

1/2 cup French fried onions

2 tablespoons cooked bacon pieces


Directions:

1.Heat the oven to 325 degrees F. Butter a 1 1/2-quart casserole dish.

2.Place potatoes in a 3-quart saucepan; cover with cold water. Add 1 tablespoon of salt. Bring to a boil. Cover, reduce heat, and cook for 20 minutes or until fork-tender. Drain the potatoes. Put pan back on burner for 1 minute, shaking the pan until the potatoes are dry. Mash the potatoes with potato masher or mixer. Add the butter, sour cream, cheese, chives and remaining 1/2 teaspoon salt. Mash or stir until mixed well.

3.Spoon the mixture into a casserole dish. Bake the potatoes for 20 to 25 minutes or until hot. Remove from oven and sprinkle with onions and cooked bacon pieces. Return the dish to the oven and bake for an additional 5 minutes.

Potato Salad


Ingredients:

New potatoes

Mayonnaise

Technique:

two. Chop spring onions in to tiny pieces & add to the potatoes in a massive bowl.
three. Squeeze a tiny lemon juice over the potatoes & spring onions.
four. Add mayonnaise & seasoning & mix well.
five. Keep refrigerated.

Potato Minced With Lobster Mixed Souce


Cook Time: 40 minutes

Prep Time: 25 minutes

Total Time: one hour, five minutes

Ingredients:

one cooked lobster, about one pound
6 medium potatoes, about 1-1/2 pounds
6 Tablespoons butter
one cup chopped green onion, white and green parts
Salt, pepper
1/2 cup cream, heated

Preparation:

Either buy a cooked lobster at a supermarket that offers cooking at no charge or boil the lobster in water to cover for ten minutes. Chilled. Peel potatoes and cut in quarters lengthwise. Place in a pan, cover with water and bring to a boil. Reduce heat to medium, partially cover and simmer for twenty minutes, or until soft. When done, remove from heat but do not drain.

Drain broth in a sieve set over a bowl. Discard shells. Return broth to pan. Boil until liquid is reduced by half. Measure out 1/2 cup. Freeze remaining broth to make use of later.

Meanwhile, with kitchen scissors, remove meat from claws and tail of lobster. Place whole lobster shell in a 3-quart saucepan. Add three cups of chilled water and bring to a boil. Cover and simmer ten minutes.

Dice lobster meat fine. In lobster pan (do not wash), melt butter over medium heat. Add lobster and green onions. Saute for three minutes to flavor the butter. Set aside.

Drain potatoes and return to pan. Shake over medium heat to evaporate any remaining water. Remove from heat. Add the 1/2 cup lobster broth, salt and pepper. Mash by hand with a potato masher until smooth. Add of the cream to produce a fluffy texture, mashing until smooth. Taste mashed potatoes and add more salt and pepper if necessary. Add the butter, lobster, and onions. Mix thoroughly.

Yield: 8 servings

Cheesy Potato Pie


Ingredients:

For Pie Crust:
two 1/2 cups flour
one 1/2 teaspoons salt
3/4 cup shortening
1/2 cup ice water

For shortcrust pastry
A 10" Flan dish or Pie tin.

For the Filling :
two lbs potatoes (peeled/cut in to halves)
8 oz onions (finely chopped)
four oz cheddar cheese (grated)
one tsp of mustard
two oz margerine
salt / pepper to taste
An additional two oz cheddar cheese (grated) for topping.

Method:


Initially merge salt in the flour.
Then add shortening and rub the margerine in to the flour together with your hands, until thoroughly mixed.
Add chilled water (a tablespoon at a time is simpler) and mix together with your hands to make pastry hold together, be definite not to have it wet. Cover with clingfilm and leave to chill in the fridge for twenty mins.


Sprinkle flour lightly on a board, and roll pastry out to the thickness of half an inch.
Line a 10" pie tin and prick with a fork to permit heat to get through the pastry. Leave in a preheated oven at 180 C for ten mins.
One time pastry is slightly cooked add the filling and cover the top with grated cheese. Cook for an additional 25 mins until golden brown.
Permit to icy before cutting .Best served with boiled vegetables.

Meanwhile Boil the potatoes in salty water for 20-25 mins.
Mash them until fluffy.
In a seperate pan melt the margerine, add the finely chopped onions and cook until tender and transparent (for ten mins).
Add the grated cheese / mustard / onions and margerine to the filling and mash throughly.
Now add salt / pepper to taste.

Tip: In the event you are short of time, use prepared quality pie crusts from the supermarket. And for the filling you can use left over potatoes.

Aalo Baday (Potato Balls)


Ingredients:

Balls:
500 g potatoes
1/2 tsp turmeric powder
one tsp red chilli powder
one tbsp dried pomegranate seeds(optional)
one tsp cumin seeds
two green chillies,finely chopped
salt to taste
1/4 cup fresh coriander,chopped
Batter:
1/2 cup gramflour
salt to taste
pinch of baking soda
1/2 tsp red chilli powder
one tbsp oil
water

Method:
For the batter,mix batter ingredients and water for a narrow consistency batter.
Boil and skin potatoes. Mash well.
Mix balls ingredients in a bowl.
Shape in to small balls about one inch in diameter.
Dip in the batter and deep fry in hot oil until golden brown.
Serve immediately with ketchup/tamarind chutney.
